While the PS4 version of Minecraft has been handed over to Sony for, hopefully, final testing, developer 4J Studios has confirmed there's still some work to do with Minecraft: Xbox One Edition.
"Down to the last few bugs with [Minecraft: Xbox One Edition]," 4J Studios tweeted this morning, adding that they are hoping to hand it over to Microsoft for testing by the end of this week.
On the bright side, 4J is currently testing a small update for the Xbox 360 version that will add the ability to transfer Xbox 360 saves to the Xbox One version ahead of its release. Yay, progress!

Minecraft for Xbox One was first announced at E3 2013. It was supposed to arrive this month, but seeing as how 4J is still bug fixing, I think an early September release is more likely.
